Description
We use giant squid (Dosidicus gigas) from the Peruvian and Mexican coasts. It has a pleasant smell and taste of fish with hints of shellfish and soft and smooth texture.
- We cook the raw squid in immersion, at boiling water temperature to achieve the right texture and flavor. Vacuum packed in a skin tray to preserve its characteristics.
- Ready to cook. Heat it on grill, on a barbecue, steamed, in the microwave or use it in cold preparations.
